Tequila, by law, has to be produced in one of five states of Mexico. Zacatecas is not one of them. But they have been making mezcal there using Weber Blue agave - the same agave as tequila - since 1915, well before the establishment of rules and regions surrounding tequila. Using traditional mezcal methods of roasting the piñas instead of autoclave, tohona crushing, and distilling on a copper pot still, it certainly appears as a mezcal, but with a round juiciness imparted by the Weber Blue. Basically, how tequila made 100 years ago would have tasted.
